Wellness Wednesday – Fajita Pie
March 7, 2018
Wellness Wednesday is a healthy Paleo/Whole30/Zone approved recipe that is super easy for anyone! I don’t know about yall, but I am RUNNING home to make this tonight after watching this short video from Nick Massie and The CrossFit Kitchen! It is an easy turkey fajita casserole topped with white sweet potato mash! If you don’t love sweet potatoes, you can sub in regular white potatoes as well! I promise they are NOT the enemy! If white potatoes are the worst thing you are eating, you are doing okay! Also, if you don’t have colorful peppers, use what you’ve got! Recipes don’t have to be followed down to the very T! Wing it! That’s one of the greatest things about cooking! You may create something new that you didn’t even know you liked!
This would be a great recipe to let your kids get involved in cooking also! They would love mashing the potatoes and dumping in all the ingredients into the turkey, I can almost guarantee it! Also, if their age permits, let them try cutting up the peppers and onions for the meat mixture as well!
Check out the video below and click here to view the full PDF version! Also, if you don’t want to make the quantity he makes in this video just cut the recipe in half! Although making it at once and freezing some for later DOES have its benefits if you are a busy parent or just on the go all the time!
Also, be on the lookout for our upcoming nutrition program coming this spring, R2R Nutrition! We can’t wait to help you achieve all your health and wellness goals!
Have a great day! Happy Cooking!
