Quick, Easy, and Delicious Recipes (ft. Coach Sarah)

Some of Coach Sarah’s favorite recipes.

Life is busy! But that can’t be an excuse to let health slip away. I’m asked frequently for recipes so here you go! Quick, easy, delicious, and nutritious meals help me stay healthy in a busy world.
1. Salsa Chicken
Pick a pound or 2 of your favorite chicken breasts, get a big jar of salsa (Pace mold is my favorite and paleo friendly). Put the chicken in the crockpot, cover with salsa and cook on low for 6-8 hours. I usually serve this over a whole bunch of broccoli (frozen if I’m in a rush) or a sweet potato.
2. Buffalo Chicken Lettuce Wraps
Again, pick a pound or 2 of your favorite chicken. Get some Frank’s buffalo sauce, chicken stock
Put the chicken in the crockpot and cover with chicken stock, add some chopped celery and carrots for flavor, salt and pepper, and cook on low 6-8 hours or until chicken is cooked but tender. Remove chicken, save 1/2-1 cup of broth and dispose of the rest. Put the chicken back in the pot, shred the chicken, add a bunch of buffalo sauce and the saved broth. I will put the chicken in big lettuce wraps and top with some goat cheese crumbles!
3. Paleo Mug Muffin (breakfast)
I’ve been eating this for many years and it hasn’t gotten old! Take a ripe banana, mash it up in a microwave safe coffee mug, add 2 eggs and beat it together. Then add whatever you want! I usually add some vanilla extract, cinnamon, honey, blueberries, and pecans. Microwave for 2-3 minutes or until cooked through, add almond butter or honey on top and enjoy!
4. Make ahead egg muffins
In a large bowl beat a bunch of eggs (I usually go 8-10) and season with salt, pepper, and garlic powder. Divide and pour into muffin tins filled halfway. Add your favorite ingredients to the muffin tins. I will add some sautéed diced green peppers, broccoli or spinach, some cooked sausage pieces and cheese . Don’t fill too high or they will overflow! Cook in the oven on 350 for about 15 min or until the tops are firm to touch. Grab a couple of these and you’ve got easy breakfast or a pre workout snack on the go!
